Healthy Honey Bunny Banana Pancakes

Easter is all about spending quality time with family and friends.  What could be nicer than making pancakes together and sharing a nourishing breakfast.

Ingredients

For the pancakes

  • 4 eggs, yolks and whites separated
  • 250g banana, mashed
  • 170g almond meal
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp coconut oil

For decoration 

Method

  1. In a large bowl, mix the egg yolks, mashed banana, cinnamon and baking powder until combined.
  2. In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form. Gently fold into the banana mixture.
  3. Heat a non-stick pan and add the coconut oil. Spoon the batter into the pan to make 2 small, 1 medium, 1 large and 2 elongated pancakes.
  4. Cook for approximately 2 minutes on each side, or until golden.

To decorate

  1. Slice the banana diagonally and place onto the ear-shaped pancakes.
  2. Add a blueberry for the tail.
  3. Using a knife dipped in honey, create the toenails on the feet.
  4. Add sliced strawberry for colour.
  5. Drizzle with Mānuka honey just before serving.
