Healthy Honey Bunny Banana Pancakes

Easter is all about spending quality time with family and friends. What could be nicer than making pancakes together and sharing a nourishing breakfast.
Ingredients
For the pancakes
- 4 eggs, yolks and whites separated
- 250g banana, mashed
- 170g almond meal
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp coconut oil
For decoration
- Banana
- Blueberries
- Strawberries
- Mānuka honey
Method
- In a large bowl, mix the egg yolks, mashed banana, cinnamon and baking powder until combined.
- In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form. Gently fold into the banana mixture.
- Heat a non-stick pan and add the coconut oil. Spoon the batter into the pan to make 2 small, 1 medium, 1 large and 2 elongated pancakes.
- Cook for approximately 2 minutes on each side, or until golden.
To decorate
- Slice the banana diagonally and place onto the ear-shaped pancakes.
- Add a blueberry for the tail.
- Using a knife dipped in honey, create the toenails on the feet.
- Add sliced strawberry for colour.
- Drizzle with Mānuka honey just before serving.
