Mānuka Honey & Blueberry Muffins

Serves 12 - Standard Muffin Tray
Ingredients
Dry ingredients:
- 2 Cups plain flour
- 2 Teaspoons baking powder
- ½ Teaspoon baking soda
- 1 Teaspoon cinnamon
Wet ingredients
- 2 eggs
- ½ cup Mānuka honey
- 1 teaspoon vanilla extract
- 120 gms butter, melted or ½ cup plain oil
- ½ cup milk
Fruit
- 1 cup frozen or fresh blueberries
Method
1. Pre-heat oven to 185° C and grease or line a standard muffin tray.
2. In a large bowl combine flour, baking powder, baking soda and cinnamon (dry ingredients) and whisk to aerate.
3. In a separate bowl whisk together eggs, honey, vanilla, melted butter and milk (wet ingredients) until smooth and well combined.
4. Fold the wet ingredients into the dry along with the blueberries (fruit) until just combined.
5. Spoon into prepared muffin tray and bake for 12-14 minutes until puffed, golden and springy with tapped on the top.
6. Serve with butter and a drizzle of Mānuka honey.
